How to Make Scallion Pancakes
This crispy recipe comes together quickly. It uses a handful of scallions (about 10 pieces), preparation is about 35 minutes and cooking is about 10 minutes.
To make this cake, simply mix your choice of flour, salt, and hot water in a bowl. Use a wooden spoon until the dough begins to form.
Place the dough on a light floured surface and knead. This would take about 5 minutes. Lather the dough in oil and place a warm, damp towel and let the dough sit for about 30 minutes.
Split the dough into four equal pieces. Roll into a lightly floured board into a 7″ circle. Brush the top with oil and sprinkle the chopped green onions. Slowly grab one end of the dough and roll (like you’re making cinnamon rolls). Cut in half and coil into another bundle.
Flatten with a rolling pin and cut into triangular pieces.
Heat a 10-inch skillet or saute pan over medium-high heat. Drizzle your choice of oil. When hot gently lay the pancake dough into the pan. Cook about 2 minutes on each side or until brown and crispy.
Dip in pancake dipping sauce or sweet and sour sauce.
