Looking for an easy and healthy recipe? Try this delectable chickpea salad sandwich that takes 5-minutes to make.
This recipe is adapted from the Chickpea Salad Sandwich Recipe from Love & Lemons. I added some of anti-inflammatory ingredients such as turmeric and ginger. The great thing about this recipe is that you can adjust it with the herbs or veggies you love!
Ingredients for Chickpea Salad Sandwich
- 1 can garbanzo beans/chickpeas about 15 oz or 1 ½ cups
- 4 slices of gluten-free, sourdough or your choice of bread
- Celery
- Red or Green Onions
- Kale or Baby Spinach
- Vegan mayonnaise or mayonnaise
- Dijon mustard
- Toppings of choice: shredded carrots, tomatoes, cucumbers, or sprouts
- Spices such as turmeric, thyme, dill
- Salt and pepper

To mash the chickpeas, you can use a manual masher tool like my KitchenAid Gourmet Masher:
If you want to speed up the process, I use a food processor like the Mini Food processor or a blender. It will save you time and energy.
How to Make Chickpea Salad Sandwich
First, drain and rinse the chickpeas. If you are using dried chickpeas, boil and let it sit for about an hour or until it softens. Place into a bowl.
Using a mashing tool or food processor, mix until smooth. Add the mayonnaise, mustard, herbs and spices. Mix until all the chickpeas are covered evenly. Add the onions and celery.
Assemble the sandwich by placing the chickpea salad on top of one piece of toasted slice of bread. Add the greens and veggies of choice, then top with another slice of bread.
Chickpea Salad Sandwich
Ingredients
- 1 can/ 15 oz garbanzo beans/chickpeas
- ½ cup celery chopped
- ½ cup red or green onion chopped
- leafy green such as baby spinach or kale
- 4 oz shredded carrots, tomatoes, cucumbers, sprouts or topping of choice
- 3 tbs vegan mayonnaise or regular mayonnaise
- 1 tsp Dijon mustard
- ½ tsp thyme optional
- ½ tsp turmeric optional
- 1 tsp fresh dill or dried dill
- salt and pepper to taste
- 4 slices gluten-free, sourdough or bread of choice
Instructions
- Drain and rinse one can or 1 ½ cups of chickpeas. Place in a bowl.
- Mash with tool, food processor or blender.
- Add mayonnaise and mustard in chickpeas. Mix well until smooth.
- Add chopped onions, and celery. Toss evenly.
- Add spices, salt and pepper.
- Toast bread and place chickpea salad onto one slice.
- Add greens, optional toppings such as carrots, tomatoes, sprouts, and peppers.
